Teriyaki Baked Salmon with Crab Topping

Hey Everyone! It's been a while since I made a post. I am slacking. To be honest there is a lot going on with me and my family at the moment. Being 7 months preggos and still in search of permanent housing and trying to juggle my 3 kids while hubby works at nights is a BIG challenge for me BUT I got this!!

I normally make dinner during lunch so that my husband has a good meal for his work night. What I decided to make tonight is not only so simple but SO DELICIOUS!


Teriyaki Baked Salmon with Crab Topping

Things you will need:

Salmon
Imitation Crab (or real crab, your choice)
1/2 Onion - chopped
Bread Crumbs
Teriyaki Sauce
Mayo - Best Foods/Hellmans preferred

Lets get cooking:

Preheat oven to 350 degrees. 

Next: Crab Topping

Chop 1/2 of an onion. Add 1 bag imitation crab. I bought the one thats already shredded. If you can't find already shredded imitation crab chop your crab really finely. Add mayo I use about 1/2 cup - 1 cup. And again, I haven't tried this recipe with any other mayo BUT Best Foods/Hellmans so please use that. Mix until everything is well incorporated.

Next: Lets go SALMON, LETS GO!

Line baking sheet with foil. I sprayed some Pam so that the salmon don't stick to the foil. You really don't have to season this because of the Teriyaki sauce, but if you don't use the Teriyaki sauce season the salmon with salt, pepper, garlic and onion powder! Cover Salmon with Teriyaki sauce. Then add Crab Topping evenly on Salmon. Spread it evenly on top. Then sprinke bread crumbs over Crab Topping. and BAM you are done!!! Simpe, easy, and sooooo good!

Next: Let it bake!

Bake in preheated over for 35=40 minutes depending on how thick your salmon is. 


This is the Salmon I purchased at Walmart. It's about $10 and can feed my family of 5. 


This is the Teriyaki sauce I purchased at Publix. It was on sale BOGO for 3.25. Great deal and it's a delicious sauce, I even used it to make Teri Burgers - YUM!

Chicken Spinach Dip Pasta Bake



If you like spinach dip, you will absolutely love this dish. It's so simple, quick, and very affordable dish to make. This was my very first time making this and it was a total hit. My husband was with me in the kitchen sitting on the table and when I served him his plate he said, "Wow, that was quick!" My kids who are 7,6, and soon to be 4 year old got 3rds! This dish will definitely added to my weekly meals. Hope you enjoy this recipe and if you get to try this recipe please let me know how yours turned out.

Ingredients

1 lb Rotini pasta
4 pieces of chicken breast
1 bottle of Alfredo sauce (I used Great Value brand)
3 pieces of garlic - chopped
5-8 oz of fresh spinach 
4 oz of cream cheese - chopped into squares
1/4 cup sour cream
Mozzarella cheese
Parmesan cheese
oil
salt
pepper
garlic powder
onion powder
Montreal Seasoning

Preheat oven to 350 degrees. In a pot fill it up and season water with salt and bring to a boil. Add Rotini and cook as directed on box, al dente. After the pasta is cook, drain it and let it rest. Now, lets get those chicken breast cooked. Season it with McCormick's Montreal Seasoning, garlic powder, and onion powder. So, oil frying pan place seasoned chicken breast and cook all the way through. 

When the chicken is done, chop into cubes or serving sizes. Add the chopped garlic and cook until for 2-3 minutes. Be sure not to burn the garlic. It will make them bitter. Add the chicken back to the pan, add Alfredo sauce and cream cheese and mix well until cream cheese is completely melted in. Add the spinach and cook until spinach is all the way cooked down. Then when the sauce is almost done add the sour cream.  Add Rotini pasta and mix well. When everything is ready and good to go place it in a baking dish. Top with Mozzarella and Parmesan cheese. Bake it for 10 - 15 minutes and you're DONE!

So easy, so quick, and so delicious. I didn't have Parmesan cheese but I definitely recommend adding it. It will make the dish 100% tastier. And it will make this "spinach dip" an even more authentic taste to this dish. Some other suggestions on adding to this dish are...

Mushrooms
or
Artichokes

Back at it AGAIN

It's been a while and I am happy to say I am back on my blog game. Took me a minute, well actually an hour or more to think of a title of my blog. I wanted it to be an everyday blog for me. A blog where I can talk about my family, share recipes, and share tears and heartbreak, share joy and happiness...Well you get the point.

I will be renovating my blog for the next couple days or even weeks just to get it to my liking. I am not a computer junkie and lets face it my Myspace HTML days are long gone. So please bare with me on my blog site for now. I am excited to see where this blog will take me.
